Salmon on Hash Brown

Another cooking activity with the little missy. This time we decided to go with something simple to make yet sophisticated in taste. We decided to cook some salmon on hash browns. The interesting thing here is we get to create the hash browns from scratch. 

Serves 6 people
1 onion
800 grams of potatoes
15 grams butter
2 tbsp olive oil
2 tbsp lemon juice or 1/2 lemon
250 grams of salmon
lemon wedges
*optional: 2 tbsp of chopped fresh dill

Step 1:
1. Peel the potatoes and grate them into thin strips using a grater. You can use a fork to ensure the safety of your fingers. Remove the initial layer of the onion and grate it too together with the potato. 

2. Get a towel and remove all the excess water from the grated potato/onion. Press/ squeeze gently as needed. Remove as much moisture as possible. Less water means more crisp to your hash browns. Season it with pepper and salt as needed.

3. Flake the salmon. Get a fork and gently peel the salmon piece by piece. Afterwards, just put it in a pan and let it cook until light pink. And set it aside.
4. Put some butter and olive oil into the pan, spread it evenly. Lump grated potatoes into a ball using your hands and place it onto the pan. Press flat using your spatula, it should look something like the image below. Cook per side for 4-5 mins or until golden brown, then flip + put butter and olive oil.

 5. For plating, put some lemon juice onto the plate. And if you have some dill or garnish you can put it here.

6. Place the cooked hash brown onto the "juiced" plate and top with the cooked hash brown. Do not be afraid to be generous with the salmon cause its just delicious. Side it with some lemon wedges and you are done!
